Oatmeal Apple Breakfast Bake

Description

A cozy breakfast bake featuring old-fashioned oats and tender chunks of apple, sweetened with maple syrup and spiced with cinnamon.

Ingredients

Scale
  • 2 cups old-fashioned oats
  • 1 ½ cups milk (or almond milk for dairy-free)
  • 1 large apple, diced
  • 2 eggs
  • ¼ cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, whisk together the eggs, milk, maple syrup, and vanilla extract.
  3. Add the oats, baking powder, cinnamon, and salt to the mixture. Stir until combined.
  4. Gently fold in the diced apples and chopped nuts (if using) into the batter.
  5. Pour the mixture into the greased baking dish, spreading it evenly. Bake for 30-35 minutes, or until the top is golden and the center is set.
  6. Allow the bake to cool for 5 minutes before slicing into squares. Enjoy warm, or refrigerate and reheat as needed for a quick breakfast.

Notes

For the best flavor, opt for sweet apple varieties like Honeycrisp or Fuji. Store leftovers at room temperature for up to 2 days or refrigerate for up to 5 days.
