- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup shredded coconut
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 egg
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- In another bowl, combine the rolled oats, flour, shredded coconut, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Fold in the chocolate chips and optional nuts (if using).
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10–12 minutes or until edges are golden brown and centers look set.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For chewier cookies, slightly underbake and allow carryover cooking. Chill the dough for thicker cookies.
