Ingredients

- 2 cups rolled oats
- 1 cup brown sugar (packed)
- 1/2 cup coconut oil (or dairy-free butter), melted
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup dairy-free chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix together rolled oats, brown sugar, melted coconut oil, maple syrup, vanilla extract, baking soda, and salt until well combined.
- Press half of the oat mixture into the bottom of the prepared pan to form a crust.
- In a microwave-safe bowl, melt the dairy-free chocolate chips until smooth. Spread the melted chocolate fudge evenly over the crust.
- Crumble the remaining oat mixture over the fudge evenly.
- Bake in the preheated oven for about 20-25 minutes or until golden brown.
- Allow to cool completely before cutting into bars and serving.
