Octopus Stew with Spices


Description

A soul-warming octopus stew that combines the flavors of the sea with a medley of spices for a delightful culinary experience.


Ingredients

  • 2 lbs octopus, cleaned and cut into pieces
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tomatoes, chopped
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon thyme
  • 2 cups fish stock
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
  3. Incorporate the diced bell pepper and cook for an additional 2-3 minutes.
  4. Stir in the chopped tomatoes, paprika, cayenne pepper, and thyme. Allow to cook for about 5 minutes to meld the flavors.
  5. Gently fold in the octopus and pour in the fish stock. Bring to a boil.
  6. Once boiling, reduce the heat and let it simmer, uncovered, for 40-50 minutes, or until the octopus is tender.
  7. Taste for seasoning and adjust with salt and pepper. Serve hot, garnished with fresh parsley.

Ensure the octopus is fully submerged in the stock for the best texture.
