- 2 lbs octopus, cleaned and cut into pieces
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 1 teaspoon paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon thyme
- 2 cups fish stock
- Salt and pepper to taste
- Olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat a splash of olive oil over medium heat.
- Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
- Incorporate the diced bell pepper and cook for an additional 2-3 minutes.
- Stir in the chopped tomatoes, paprika, cayenne pepper, and thyme. Allow to cook for about 5 minutes to meld the flavors.
- Gently fold in the octopus and pour in the fish stock. Bring to a boil.
- Once boiling, reduce the heat and let it simmer, uncovered, for 40-50 minutes, or until the octopus is tender.
- Taste for seasoning and adjust with salt and pepper. Serve hot, garnished with fresh parsley.
