Delightful and soft tea cakes that melt in your mouth, perfect for cozy moments and gatherings, best enjoyed with a cup of tea or coffee.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chopped nuts (optional)
  • 1 tsp ground cinnamon or nutmeg (optional)
  • 1 cup chocolate chips or dried fruits (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a baking sheet with parchment paper.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each addition.
  4. Add the milk and vanilla extract, mixing until fully combined.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  7. Drop spoonfuls of dough onto the prepared baking sheet, leaving space for spreading.
  8. Bake for 12-15 minutes or until the edges are lightly golden. Allow to cool on a wire rack.

Notes

Serve plain or with softened butter and jams. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
