Description
A hearty comfort food delight that combines savory flavors and textures, perfect for cozy evenings.
Ingredients
Scale
- 1 lb ground beef
- 1 medium onion, chopped
- 2 celery stalks, chopped
- 2 carrots, chopped
- 3 cloves garlic, minced
- 1 can (15 oz) red kidney beans, rinsed and drained
- 1 can (15 oz) white cannellini beans, rinsed and drained
- 1 can (14.5 oz) diced tomatoes
- 3 cups beef broth
- 1 cup water
- 1 tbsp Italian seasoning
- 1/2 tsp black pepper
- 1 cup small pasta (like ditalini)
- Salt to taste
- Grated Parmesan cheese for serving
Instructions
- In a large pot over medium heat, add the ground beef and cook until browned, draining any excess fat.
- Add the chopped onions, celery, carrots, and minced garlic to the pot. Sauté until the vegetables are soft, about 5-7 minutes.
- Stir in the rinsed kidney beans, cannellini beans, diced tomatoes, beef broth, water, Italian seasoning, and black pepper. Bring the mixture to a boil.
- Reduce the heat and let it simmer for about 30 minutes to allow the flavors to meld beautifully.
- Stir in the small pasta and cook until al dente, about 10-12 minutes. Be careful not to overcook the pasta; it should maintain a slight bite.
- Taste and season with salt as needed.
- Serve hot, topped generously with grated Parmesan cheese.
Notes
For added flavor, use high-quality ground beef with a bit of fat. Consider adding crushed red pepper flakes for a spicier kick.
