  • 1 can (15 oz) red kidney beans, rinsed and drained
  • 1 can (15 oz) white cannellini beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes
  • 3 cups beef broth
  • 1 cup water
  • 1 tbsp Italian seasoning
  • 1/2 tsp black pepper
  • 1 cup small pasta (like ditalini)
  • Salt to taste
  • Grated Parmesan cheese for serving

Instructions

  1. In a large pot over medium heat, add the ground beef and cook until browned, draining any excess fat.
  2. Add the chopped onions, celery, carrots, and minced garlic to the pot. Sauté until the vegetables are soft, about 5-7 minutes.
  3. Stir in the rinsed kidney beans, cannellini beans, diced tomatoes, beef broth, water, Italian seasoning, and black pepper. Bring the mixture to a boil.
  4. Reduce the heat and let it simmer for about 30 minutes to allow the flavors to meld beautifully.
  5. Stir in the small pasta and cook until al dente, about 10-12 minutes. Be careful not to overcook the pasta; it should maintain a slight bite.
  6. Taste and season with salt as needed.
  7. Serve hot, topped generously with grated Parmesan cheese.

Notes

For added flavor, use high-quality ground beef with a bit of fat. Consider adding crushed red pepper flakes for a spicier kick.
