  • 1/4 cup almond milk (or other dairy-free milk)
  • 1/4 cup granulated sugar (for sprinkling)
  • 1 teaspoon ground cinnamon (for sprinkling)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a mixing bowl, whisk together the flour, baking soda, salt, and 1 teaspoon cinnamon.
  3. Add the brown sugar, oil, vanilla extract, and almond milk; stir until well combined.
  4. Add the wet mixture to the dry ingredients and stir gently until just combined.
  5. Spread the batter evenly into the greased baking dish.
  6. In a small bowl, mix the granulated sugar and 1 teaspoon cinnamon; sprinkle it evenly over the batter.
  7. Bake for 20–25 minutes until the edges are golden and a toothpick comes out with a few moist crumbs.
  8. Let it cool in the pan for 15–20 minutes before cutting into bars.

Notes

For softer bars, avoid overmixing. Use a toothpick to check for doneness.
