One-Layer Chocolate Cake

Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water
  • For optional frosting:
  • 1 cup unsweetened cocoa powder
  • ½ cup butter, softened
  • 4 cups powdered sugar
  • ½ cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with cooking spray or butter, and dust it with flour.
  2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract. Mix until smooth.
  4. Slowly add boiling water; the batter will be thin.
  5. Pour batter into the prepared cake pan. Tap gently to remove air bubbles.
  6. Bake for 30-35 minutes or until a toothpick comes out clean.
  7. Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  8. If making frosting, beat softened butter and cocoa powder until well blended. Gradually add powdered sugar and milk, mixing until the desired consistency.
  9. Once the cake is cool, frost with the chocolate frosting and decorate as desired.

Notes

Serve with whipped cream or vanilla ice cream for an extra treat!
