Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the zucchini, bell peppers, cherry tomatoes, onion, and minced garlic.
- Drizzle the vegetables with olive oil and sprinkle with oregano, salt, and pepper.
- Gently toss everything together until well coated.
