One-Pot Chicken and Mushroom Pasta

Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 ounces pasta (penne or fettuccine)
  • 8 ounces mushrooms, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chicken and cook until browned, about 5-7 minutes. Remove and set aside.
  3. In the same pot, add the onion and garlic, sauté until translucent.
  4. Stir in the mushrooms and cook until softened, about 3-4 minutes.
  5. Add the chicken back to the pot along with pasta, chicken broth, and heavy cream.
  6. Bring to a boil, then reduce heat and simmer until the pasta is cooked and the chicken is done, about 10-12 minutes.
  7. Season with salt and pepper to taste.
  8. Serve topped with grated Parmesan cheese and fresh parsley.

Notes

For a vegan version, substitute chicken with chickpeas or tofu. For gluten-free, use gluten-free pasta.
