Ingredients

- 2 boneless, skinless chicken breasts
- 8 ounces pasta (penne or fettuccine)
- 8 ounces mushrooms, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tablespoon olive oil
- Salt and pepper to taste
- Parmesan cheese for serving
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the chicken and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same pot, add the onion and garlic, sauté until translucent.
- Stir in the mushrooms and cook until softened, about 3-4 minutes.
- Add the chicken back to the pot along with pasta, chicken broth, and heavy cream.
- Bring to a boil, then reduce heat and simmer until the pasta is cooked and the chicken is done, about 10-12 minutes.
- Season with salt and pepper to taste.
- Serve topped with grated Parmesan cheese and fresh parsley.
Notes
For a vegan version, substitute chicken with chickpeas or tofu. For gluten-free, use gluten-free pasta.
