			- 8 ounces pasta (spaghetti or fettuccine)
 - 4 cups vegetable broth
 - 4 cloves garlic, minced
 - 1 cup grated Parmesan cheese
 - 2 tablespoons olive oil
 - Salt and pepper to taste
 - Chopped parsley for garnish
 
Instructions
- In a large pot, combine the pasta, vegetable broth, minced garlic, and olive oil.
 - Bring to a boil over medium-high heat, stirring occasionally.
 - Cook for about 10 minutes, until the pasta is al dente and most of the liquid has been absorbed.
 - Remove from heat and stir in the Parmesan cheese until it has melted.
 - Season with salt and pepper to taste.
 - Serve hot, garnished with chopped parsley.
 
Notes
Stir the pasta occasionally to prevent sticking, and taste for doneness a minute or two before suggested cooking time.
