Hearty Lentil & Vegetable Stew

Ingredients

  • 1 cup green or brown lentils, rinsed
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 bell pepper, chopped
  • 1 zucchini, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: Fresh parsley for garnish

Instructions

  1. In a large pot or a OnePot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery and sauté for 5-7 minutes, or until softened.
  2. Stir in the minced garlic, cumin, thyme, salt, and pepper. Cook for an additional minute until fragrant.
  3. Add the bell pepper, zucchini, and diced tomatoes (with their juice) to the pot. Stir to combine.
  4. Pour in the rinsed lentils and vegetable broth. Bring the mixture to a boil.
  5. Lower the heat to a simmer, cover, and let it cook for 30-35 minutes until the lentils are tender, stirring occasionally.
  6. Taste and adjust the seasoning as needed. If you prefer a thicker stew, mash some lentils against the side of the pot.
  7. Ladle into bowls and garnish with fresh parsley if desired.

Notes

Avoid overcooking the lentils by checking their doneness a few minutes before the end of the cooking time.
