- 1 cup green or brown lentils, rinsed
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 bell pepper, chopped
- 1 zucchini, diced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: Fresh parsley for garnish
Instructions
- In a large pot or a OnePot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery and sauté for 5-7 minutes, or until softened.
- Stir in the minced garlic, cumin, thyme, salt, and pepper. Cook for an additional minute until fragrant.
- Add the bell pepper, zucchini, and diced tomatoes (with their juice) to the pot. Stir to combine.
- Pour in the rinsed lentils and vegetable broth. Bring the mixture to a boil.
- Lower the heat to a simmer, cover, and let it cook for 30-35 minutes until the lentils are tender, stirring occasionally.
- Taste and adjust the seasoning as needed. If you prefer a thicker stew, mash some lentils against the side of the pot.
- Ladle into bowls and garnish with fresh parsley if desired.
Notes
Avoid overcooking the lentils by checking their doneness a few minutes before the end of the cooking time.
