Paleo Egg Roll in a Bowl


Description

A comforting and quick dish that captures the essence of traditional egg rolls without the wrapper, featuring ground turkey and fresh vegetables.


Ingredients

  • 1 tbsp avocado oil
  • 1 head green cabbage, sliced into strips (about 800 g)
  • 3 large carrots, grated
  • 2 garlic cloves, minced
  • 1/3 cup coconut aminos
  • 1 tbsp sesame oil
  • 1 lb (453 g) ground organic turkey (93% lean)
  • 5 green onions, chopped (white + green parts)
  • Sea salt + freshly ground black pepper, to taste
  • Dash of red pepper flakes (optional)

Instructions

  1. Heat a large skillet over medium heat and add avocado oil.
  2. Add the sliced cabbage and stir to coat in the oil, letting it sweat slightly.
  3. Stir in the grated carrots and cook for about 5 minutes, stirring frequently, until slightly softened.
  4. Add the minced garlic, coconut aminos, and sesame oil. Season with salt and pepper and add red pepper flakes if desired.
  5. Continue cooking until cabbage and carrots are tender, about 5–7 minutes; then remove and transfer to a bowl.
  6. Add the ground turkey to the skillet and cook until browned, about 6–8 minutes.
  7. Combine the cooked meat with the veggies and stir in the chopped green onions.
  8. Taste and adjust seasoning; serve hot.

Notes

For a vegan option, substitute ground turkey with firm tofu or tempeh. Can serve in lettuce cups for an interactive meal.
