  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1 1/2 cups diced fresh peaches
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, ensuring they’re fully incorporated before adding the next. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients until just combined.
  6. Fold in the diced peaches and chopped nuts (if using) until evenly distributed.
  7. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes, or until the edges are golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a vegan version, substitute eggs and use dairy-free butter. Store cookies in an airtight container for up to 3 days, or freeze for up to 3 months.
