- 1 1/2 cups diced fresh peaches

Instructions
- Preheat your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, ensuring they’re fully incorporated before adding the next. Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients until just combined.
- Fold in the diced peaches and chopped nuts (if using) until evenly distributed.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a vegan version, substitute eggs and use dairy-free butter. Store cookies in an airtight container for up to 3 days, or freeze for up to 3 months.
