  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 ½ cups diced peaches (fresh or canned)
  • ½ cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined—be careful not to overmix!
  6. Gently fold in the diced peaches and the chopped nuts if using.
  7. Drop rounded tablespoons of cookie dough onto a baking sheet lined with parchment paper, spacing them about two inches apart.
  8. Bake for 12-15 minutes, or until the edges are golden and the centers are slightly set.
  9. Allow to cool slightly on the baking sheet before transferring the cookies to a wire rack.
