A nostalgic treat combining peanut butter and jelly in a delightful cookie form, perfect for family gatherings or a sweet pick-me-up.

			- 1 cup peanut butter
 - 1 cup sugar
 - 1 egg
 - 1/2 cup jelly or jam (your choice)
 - 1 teaspoon vanilla extract
 - 1/2 teaspoon baking soda
 - 1/4 teaspoon salt
 
Instructions
- Preheat your oven to 350°F (175°C).
 - In a mixing bowl, combine the peanut butter, sugar, egg, vanilla extract, baking soda, and salt until well blended. Be careful not to overmix.
 - Roll the dough into small balls (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper, leaving enough space in between for spreading.
 - Make a small indentation in each ball with your thumb, gently pressing down. Fill each indentation with your chosen jelly or jam.
 - Bake for 10-12 minutes, or until the edges are lightly golden. Keep an eye on them toward the end to avoid overbaking.
 - Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
 
Notes
These cookies can be served plain or with a dollop of additional peanut butter. For a luxurious treat, toast them and spread butter or honey.
