Peanut Butter and Jelly Cookies

Ingredients

  • 1 cup peanut butter
  • 1 cup sugar
  • 1 egg
  • 1/2 cup jelly or jam (your choice)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the peanut butter, sugar, egg, vanilla extract, baking soda, and salt until well blended. Be careful not to overmix.
  3. Roll the dough into small balls (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper, leaving enough space in between for spreading.
  4. Make a small indentation in each ball with your thumb, gently pressing down. Fill each indentation with your chosen jelly or jam.
  5. Bake for 10-12 minutes, or until the edges are lightly golden. Keep an eye on them toward the end to avoid overbaking.
  6. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookies can be served plain or with a dollop of additional peanut butter. For a luxurious treat, toast them and spread butter or honey.
