Peanut Butter-Chocolate No-Bake Cookies

Ingredients

  • 1 cup peanut butter
  • 1 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 3 cups quick oats
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup butter
  • Optional: Chopped nuts or coconut for added texture or a pinch of salt

Instructions

  1. In a saucepan, combine sugar, cocoa powder, milk, and butter. Cook over medium heat, stirring constantly, until the mixture comes to a boil, about 2-3 minutes.
  2. Remove from heat and stir in the peanut butter and vanilla extract until thoroughly combined.
  3. Add in the quick oats, stirring until well combined.
  4. Drop spoonfuls of the mixture onto wax paper or parchment paper.
  5. Let the cookies cool completely until they’re set, about 30 minutes at room temperature.

Notes

For a richer flavor, use natural, unsweetened peanut butter. To keep fresh, store in an airtight container.
