Ingredients

  • 1 cup peanut butter
  • 1/2 cup honey
  • 1 cup rolled oats
  • 1/2 cup chocolate chips
  • 1/2 cup ground flaxseed
  • 1/2 tsp vanilla extract

Instructions

  1. In a mixing bowl, combine peanut butter, honey, and vanilla extract. Stir until smooth and creamy.
  2. Add rolled oats, chocolate chips, and ground flaxseed to the bowl. Mix well until the ingredients are thoroughly combined.
  3. Roll the mixture into small balls, about 1 inch in diameter.
  4. Place the energy bites on a baking sheet lined with parchment paper.
  5. Refrigerate for at least one hour to firm up the bites.
  6. Store in an airtight container in the fridge.

Notes

These energy bites can be enjoyed on their own or with a spread of additional peanut butter. They also freeze well for up to three months.
