  • 4 chicken breasts (boneless, skinless)
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • 1 cup cilantro leaves (packed)
  • 1 jalapeño, seeds removed
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice (freshly squeezed)
  • 2 cloves garlic, peeled

Instructions

  1. Preheat your grill to medium-high heat. Clean and oil the grates.
  2. Mix olive oil, paprika, cumin, salt, and pepper in a bowl. Rub it onto the chicken breasts and let rest for 5–10 minutes.
  3. Grill chicken for 6–7 minutes per side, or until fully cooked (target temp 165°F). Let rest for 5 minutes before slicing.
  4. In a blender, combine cilantro, jalapeño, mayonnaise, lime juice, and garlic. Blend until smooth for the sauce.
  5. Serve the grilled chicken hot, drizzled with the creamy green sauce.

Notes

For lighter sauce options, substitute Greek yogurt or avocado for mayonnaise. Chicken thighs can also be used, increasing cooking time. Adjust the sauce ingredients to taste.
