- 1 pound chicken breast, cubed
- 1 cup pineapple chunks (canned or fresh)
- 1 cup bell peppers, diced
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 3 tablespoons soy sauce

- Salt and pepper to taste

Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the onions and garlic, and sauté until translucent.
- Add the cubed chicken, season with salt and pepper, and cook until browned.
- Stir in the bell peppers and pineapple chunks, and cook for about 5 minutes.
- Add the cooked rice and soy sauce, mixing well to combine.
- Cook for an additional 2-3 minutes, stirring occasionally.
- Serve hot, garnished with green onions if desired.
Notes
For best results, use fresh pineapple. Experiment with spices like ginger or cilantro.
