- 1½ cups water
- 1 tablespoon unsalted butter
- 1 (8 ounce) can crushed pineapple in juice (do not drain)
- ½ teaspoon Kosher salt
- 1 tablespoon granulated sugar
- 1½ tablespoons fresh lime juice
- 2 tablespoons green onion (chopped)
- Chopped cilantro for garnish (optional)
- Red pepper flakes for a bit of heat (optional)
Instructions
- In a medium saucepan, combine jasmine rice, water, butter, crushed pineapple, salt, and sugar. Stir until well combined.
- Heat on medium-high until the mixture starts boiling, then reduce the heat to a simmer and cover.
- Cook for 15-20 minutes or until the rice is tender and the moisture is absorbed.
- Remove the saucepan from heat and squeeze fresh lime juice over the top. Fluff the rice gently with a fork.
- Serve hot, garnished with freshly chopped green onions.
Notes
Avoid overmixing the rice after fluffing to maintain its texture. Check for doneness by tasting a grain of rice.
