Pineapple Rice


Description

Ingredients

  • 1 cup jasmine rice (not instant)
  • 1½ cups water
  • 1 tablespoon unsalted butter
  • 1 (8 ounce) can crushed pineapple in juice (do not drain)
  • ½ teaspoon Kosher salt
  • 1 tablespoon granulated sugar
  • 1½ tablespoons fresh lime juice
  • 2 tablespoons green onion (chopped)
  • Chopped cilantro for garnish (optional)
  • Red pepper flakes for a bit of heat (optional)

Instructions

  1. In a medium saucepan, combine jasmine rice, water, butter, crushed pineapple, salt, and sugar. Stir until well combined.
  2. Heat on medium-high until the mixture starts boiling, then reduce the heat to a simmer and cover.
  3. Cook for 15-20 minutes or until the rice is tender and the moisture is absorbed.
  4. Remove the saucepan from heat and squeeze fresh lime juice over the top. Fluff the rice gently with a fork.
  5. Serve hot, garnished with freshly chopped green onions.

Notes

Avoid overmixing the rice after fluffing to maintain its texture. Check for doneness by tasting a grain of rice.
