Pistachio Bird’s Nests


Description

Delightful no-bake treats made with chocolate, coconut, and pistachios, shaped like whimsical nests and topped with mini chocolate eggs.


Ingredients

  • 1 cup pistachios, shelled and chopped
  • 1 cup sweetened shredded coconut
  • 1 cup chocolate chips (milk or dark)
  • 1/2 cup butterscotch chips
  • 1/2 cup mini chocolate eggs (for decoration)

Instructions

  1. In a microwave-safe bowl, combine chocolate chips and butterscotch chips. Microwave in 30-second intervals, stirring in between, until smooth and creamy.
  2. Stir in the chopped pistachios and shredded coconut until the mixture is well combined and evenly coated.
  3. Drop spoonfuls of the mixture onto a parchment-lined baking sheet. Use your fingers to create a nest shape with a well in the center of each mound.
  4. Let the nests cool for about five minutes, then place a few mini chocolate eggs in the center of each nest, gently pressing them in.
  5. Allow the nests to set at room temperature or refrigerate until firm, about 30 minutes.

Notes

Store in an airtight container: Room temperature for up to 3 days, refrigerator for about a week, or freeze for up to 3 months.
