- 1 cup quinoa, rinsed
- 2 cups vegetable broth
- 1 cup marinara sauce
- 1 bell pepper, diced
- 1 small onion, diced
- 1 cup mushrooms, sliced
- 1 cup spinach, chopped
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1 cup mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium pot, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat and simmer for 15 minutes or until the quinoa is cooked and fluffy.
- While the quinoa is cooking, heat olive oil in a skillet over medium heat. Sauté the onion and bell pepper until softened, about 5 minutes.
- Add the mushrooms, spinach, oregano, garlic powder, salt, and pepper to the skillet, cooking until the spinach is wilted.
- In a large bowl, combine the cooked quinoa, sautéed vegetables, and marinara sauce. Mix well.
- Transfer the mixture to a greased casserole dish.
- Top with mozzarella and Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
For extra flavor, consider adding Italian seasoning or crushed red pepper flakes. Store leftovers in an airtight container for up to 3-4 days in the fridge.
