  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 cup marinara sauce
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 1 cup mushrooms, sliced
  • 1 cup spinach, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium pot, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat and simmer for 15 minutes or until the quinoa is cooked and fluffy.
  3. While the quinoa is cooking, heat olive oil in a skillet over medium heat. Sauté the onion and bell pepper until softened, about 5 minutes.
  4. Add the mushrooms, spinach, oregano, garlic powder, salt, and pepper to the skillet, cooking until the spinach is wilted.
  5. In a large bowl, combine the cooked quinoa, sautéed vegetables, and marinara sauce. Mix well.
  6. Transfer the mixture to a greased casserole dish.
  7. Top with mozzarella and Parmesan cheese.
  8. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving.

Notes

For extra flavor, consider adding Italian seasoning or crushed red pepper flakes. Store leftovers in an airtight container for up to 3-4 days in the fridge.
