Potato Knishes


Description

Delicious pastries encasing a creamy, seasoned potato filling within a tender, flaky dough, perfect for breakfast or snacks.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 tsp salt
  • 1/2 cup water
  • 4 large potatoes, peeled and cubed
  • 1 onion, chopped
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine flour, softened butter, and salt. Gradually add water until a dough forms. Knead until smooth, wrap in plastic, and let rest for 30 minutes.
  3. Boil cubed potatoes until tender, drain and mash. Sauté chopped onion in vegetable oil until golden brown, then mix with mashed potatoes and season.
  4. Roll out the rested dough on a floured surface to about 1/8 inch thick and cut into circles (4 inches in diameter).
  5. Place a spoonful of potato filling in the center of each circle, fold the dough over and pinch to seal.
  6. Brush each knish with the beaten egg.
  7. Arrange the knishes on a baking sheet and bake for 25-30 minutes until golden brown.
  8. Serve warm.

Notes

Enjoy knishes with melted butter or sour cream. They can be stored in an airtight container for up to 3 days or frozen for up to 3 months.
