Ingredients

- 500g potatoes
- 250g all-purpose flour
- 100g sour cream
- 100g butter (softened)
- 1 egg
- Salt to taste
- Baking powder (optional: 1 tsp for fluffiness)
Instructions
- Boil the potatoes in salted water until tender, then mash them until smooth.
- In a mixing bowl, combine the mashed potatoes, flour, sour cream, and softened butter.
- Add the egg and mix until a dough forms.
- If desired, add a teaspoon of baking powder for extra fluffiness.
- Roll out the dough on a floured surface to about 1 cm thick and cut into your preferred shapes.
- Place the cut scones on a baking sheet and bake in a preheated oven at 180°C (350°F) for about 20-25 minutes or until golden brown.
Notes
Serve warm with butter or drizzled with honey. These scones store well in an airtight container for up to 3 days.
