Potato Scone


Description

Soft and fluffy potato scones perfect for cozy mornings and afternoon teas.


Ingredients

  • 500g potatoes
  • 250g all-purpose flour
  • 100g sour cream
  • 100g butter (softened)
  • 1 egg
  • Salt to taste
  • Baking powder (optional: 1 tsp for fluffiness)

Instructions

  1. Boil the potatoes in salted water until tender, then mash them until smooth.
  2. In a mixing bowl, combine the mashed potatoes, flour, sour cream, and softened butter.
  3. Add the egg and mix until a dough forms.
  4. If desired, add a teaspoon of baking powder for extra fluffiness.
  5. Roll out the dough on a floured surface to about 1 cm thick and cut into your preferred shapes.
  6. Place the cut scones on a baking sheet and bake in a preheated oven at 180°C (350°F) for about 20-25 minutes or until golden brown.

Notes

Serve warm with butter or drizzled with honey. These scones store well in an airtight container for up to 3 days.
