Queen of Puddings


Description

A traditional British pudding featuring layers of soft bread, fruity jam, and a cloud-like meringue topping.


Ingredients

  • 4 slices of bread
  • 2 cups milk
  • 1/2 cup sugar
  • 1/4 cup butter
  • 3 eggs
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1/2 cup raspberry jam
  • 1/4 cup breadcrumbs
  • 1/4 cup additional sugar for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. Tear the bread into pieces and place it in a large mixing bowl. Pour the milk over the bread and let it soak for about 10 minutes.
  3. In a saucepan, melt the butter over low heat and add 1/2 cup sugar. Stir until well combined.
  4. In a separate bowl, beat the eggs until frothy, then mix in the melted butter mixture, lemon zest, and vanilla extract.
  5. Combine the soaked bread mixture with the egg mixture and pour it into the greased baking dish.
  6. Bake for 30-35 minutes, or until the pudding is set and lightly golden on top.
  7. Once baked, spread a generous layer of raspberry jam over the top.
  8. In another bowl, whisk the egg whites until soft peaks form, then gradually add the remaining sugar until stiff peaks form.
  9. Carefully fold in the breadcrumbs, and spoon the meringue over the jam layer.
  10. Return to the oven and bake for an additional 10-15 minutes, until the meringue is golden and crisp.

Notes

Queen of Puddings is best served warm and pairs beautifully with tea or coffee. Add a dusting of powdered sugar or a side of cream or vanilla ice cream.
