Instructions

  1. Toast the slices of whole-grain bread until golden brown.
  2. While the bread is toasting, cut the ripe avocado in half and remove the pit. Scoop the flesh into a small bowl.
  3. Using a fork, mash the avocado to your desired creaminess.
  4. Add olive oil, salt, and pepper to taste, and mix well.
  5. Spread the mashed avocado evenly over each slice of toast.
  6. Add the halved cherry tomatoes on top and garnish with fresh basil or cilantro if desired.
