Ingredients

  • 100g mixed nuts (hazelnuts, almonds, or pistachios)
  • 100g dried fruit (raisins, cranberries, or apricots)
  • 100g sugar
  • 100g unsalted butter
  • 200g dark chocolate

Instructions

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. Chop the mixed nuts and dried fruit into small pieces, ensuring they are all roughly the same size for even cooking.
  3. In a saucepan, melt the sugar and butter over medium heat, stirring until combined and slightly caramelized. Be careful not to let it burn!
  4. Stir in the chopped nuts and dried fruit, mixing until everything is well coated in the buttery caramel.
  5. Using a spoon, drop small spoonfuls of the mixture onto the prepared baking sheet, making sure to space them apart as they will spread during baking.
  6. Bake for 10-12 minutes or until the edges are golden brown. Keep an eye on them to avoid burning.
  7. Remove from the oven and allow them to cool completely on the baking sheet.
  8. Once cooled, melt the dark chocolate in a microwave or a double boiler. Drizzle or dip each florentine in the melted chocolate. Allow the chocolate to set before serving.

Notes

To enhance flavor, consider toasting the nuts before mixing them into the recipe. Add a sprinkle of sea salt on top of the chocolate for a delightful sweet-and-salty contrast.
