- 1 pound (454 g) boneless skinless chicken breast, cut into 1–1.5 inch cubes
- 1/2 cup (120 ml) ranch dressing
- 2 cloves garlic, minced (or 1 tsp garlic paste)
- 1/2 cup (about 44 g) grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
- Wooden or metal skewers (if wooden, soak in water 30 minutes before grilling)
Instructions
- In a medium bowl, mix together the ranch dressing, minced garlic, and grated Parmesan cheese until well combined.
- Add the chicken cubes to the marinade, and stir to coat every piece thoroughly.
- Cover and refrigerate for at least 30 minutes; up to 4 hours is fine.
- Preheat the grill to medium-high heat (about 400–450°F / 200–230°C).
- Thread the marinated chicken onto skewers, leaving a little space between each piece.
- Season the threaded skewers lightly with salt and freshly ground black pepper.
- Grill the skewers for 10–12 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F (74°C).
- Remove from heat, let rest for 3–5 minutes, then serve warm and enjoy!
Notes
For extra flavor, brush with leftover marinade during the last few minutes of grilling, avoid overcooking, and use an instant-read thermometer for accuracy.
