- 2 cups raw unsalted walnuts
- 2 cups packed pitted Medjool dates
- 1/2 cup cocoa powder
- 1 tsp vanilla extract
- Pinch of salt
- 1/4 cup coconut oil
- 1/3 cup cocoa powder (for topping)
- 1/4 tsp vanilla extract (for topping)
- 2 tbsp maple syrup
- 1/3 cup walnuts (optional, for chunks)
Instructions
- Line an 8×8-inch pan with parchment paper and set aside.
- In a food processor, pulse 2 cups of walnuts, Medjool dates, cocoa powder, vanilla, and salt until a sticky dough forms.
- If using, add the optional 1/3 cup walnuts for chunks to the processor and pulse a few times to incorporate.
- Press the mixture firmly into the prepared pan and smooth the top.
- Melt the dark chocolate with coconut oil in the microwave or over a double boiler until smooth, then pour it over the brownies and spread evenly.
- Chill in the fridge or freezer for at least 1 hour to set.
- Once set, remove from the pan and slice into squares.
Notes
For a nut-free option, substitute walnuts with sunflower or pumpkin seeds. Use high-quality cocoa powder for deeper flavor.
