Ingredients

  • 2 cups raw unsalted walnuts
  • 2 cups packed pitted Medjool dates
  • 1/2 cup cocoa powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1/4 cup coconut oil
  • 1/3 cup cocoa powder (for topping)
  • 1/4 tsp vanilla extract (for topping)
  • 2 tbsp maple syrup
  • 1/3 cup walnuts (optional, for chunks)

Instructions

  1. Line an 8×8-inch pan with parchment paper and set aside.
  2. In a food processor, pulse 2 cups of walnuts, Medjool dates, cocoa powder, vanilla, and salt until a sticky dough forms.
  3. If using, add the optional 1/3 cup walnuts for chunks to the processor and pulse a few times to incorporate.
  4. Press the mixture firmly into the prepared pan and smooth the top.
  5. Melt the dark chocolate with coconut oil in the microwave or over a double boiler until smooth, then pour it over the brownies and spread evenly.
  6. Chill in the fridge or freezer for at least 1 hour to set.
  7. Once set, remove from the pan and slice into squares.

Notes

For a nut-free option, substitute walnuts with sunflower or pumpkin seeds. Use high-quality cocoa powder for deeper flavor.
