- 1 cup ricotta cheese
- 1 tbsp lemon juice

Instructions
- Preheat the oven to 425°F (220°C).
- Toss the baby carrots with olive oil, smoked paprika, salt, and pepper until well coated.
- Place the carrots on a baking sheet in a single layer, ensuring they are not overcrowded.
- Roast for about 20-25 minutes, or until tender and caramelized, turning them halfway through for even roasting.
- While the carrots roast, mix the ricotta cheese and lemon juice until creamy and smooth in a separate bowl.
- Once the carrots are done, remove them from the oven and let them cool slightly.
- Serve the roasted carrots topped with whipped ricotta and drizzled with hot honey; garnish with fresh herbs if desired and enjoy!
Notes
For a vegan version, substitute the ricotta with a whipped silken tofu mixed with lemon juice and a pinch of salt. Check for doneness by piercing with a fork.
