  • 1 lb baby carrots (or halved standard carrots)
  • 2 tbsp olive oil (fruity variety)
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 tbsp lemon juice
  • Hot honey (to drizzle on top)
  • Fresh herbs (for garnish, optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the baby carrots with olive oil, smoked paprika, salt, and pepper until well coated.
  3. Place the carrots on a baking sheet in a single layer, ensuring they are not overcrowded.
  4. Roast for about 20-25 minutes, or until tender and caramelized, turning them halfway through for even roasting.
  5. While the carrots roast, mix the ricotta cheese and lemon juice until creamy and smooth in a separate bowl.
  6. Once the carrots are done, remove them from the oven and let them cool slightly.
  7. Serve the roasted carrots topped with whipped ricotta and drizzled with hot honey; garnish with fresh herbs if desired and enjoy!

Notes

For a vegan version, substitute the ricotta with a whipped silken tofu mixed with lemon juice and a pinch of salt. Check for doneness by piercing with a fork.
