Ingredients

  • 1 medium zucchini
  • 1 medium sweet potato
  • 1 medium beet
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Thinly slice the zucchini, sweet potato, and beet to 1/8 inch thickness for best results.
  3. In a mixing bowl, toss the vegetable slices with olive oil, salt, pepper, and any optional seasonings.
  4. Arrange the slices in a single layer on a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes, flipping halfway through baking until golden and crispy.
  6. Let the chips cool on the baking sheet for a few minutes before serving.
