A delicious Salted Caramel Apple Pie Cheesecake combining creamy cheesecake with spiced apple filling and a drizzle of caramel.

- 4 medium apples, sliced
- 3 tbsp salted butter
- 1–2 tbsp apple cider
- 1/3 cup light brown sugar, packed
- 1 and 1/4 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ground cloves
- 1/8 tsp allspice
- 1–2 tsp lemon juice (to taste)
- 2 tsp cornstarch
- 2 tsp water
- 3 cups cinnamon graham cracker crumbs
- 1/2 cup + 3 tbsp salted butter, melted
- 32 ounces cream cheese, at room temperature
- 1 and 1/2 cups granulated sugar
- 4 large eggs, at room temperature
- 2 tsp vanilla extract
- 1 and 1/2 tsp cornstarch
- 3/4 cup full-fat sour cream, at room temperature
- 1 tsp cinnamon
- 1/4 cup all-purpose flour
- 1/2 cup old-fashioned whole rolled oats
- 1/4 cup brown sugar, packed
- 1/2 tsp cinnamon
- 1/8 tsp salt
- 1/4 cup cold salted butter, cubed
- 1 cup granulated sugar
- 6 tbsp salted butter, cubed
- 1/2 cup + 1 tbsp heavy cream
- Pinch of flaky sea salt
Instructions
- Make the Apple Filling: Peel & slice apples, combine all apple filling ingredients in a medium pan over medium-high heat, cook for 8-14 minutes until softened.
- Make the Crust: Preheat oven to 350°F (175°C). Combine crust ingredients and press into a 9-inch springform pan, bake for 10 minutes.
- Prepare the Cheesecake Filling: Cream softened cream cheese and sugar until smooth, add eggs one at a time, mix gently, then incorporate vanilla, cornstarch, sour cream, and spices.
- Assemble the Cheesecake: Pour half the batter into the cooled crust, layer with apple filling, and cover with the remaining batter.
- Water Bath Prep: Place cheesecake pan in a larger roasting pan, pour boiling water into the roasting pan.
- Bake: Bake for 1 hour to 1 hour and 50 minutes, cool slowly in the oven, refrigerate for at least 6 hours or overnight.
- Make Crumble Topping: Combine topping ingredients, bake until golden, and allow to cool.
- Prepare Salted Caramel Sauce: Prepare caramel sauce, allow to cool before drizzling.
- Serve: Top cheesecake with apple pie filling, crumble topping, and salted caramel sauce, slice and enjoy!
Notes
Use a mix of tart and sweet apples for best flavor. Allow cheesecake to cool gradually to prevent cracks.
