  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1 cup shredded cheese (e.g., cheddar or mozzarella)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add sliced sausage and cook until browned, about 5 minutes.
  3. Add minced garlic and mixed vegetables, sautéing until the veggies are tender, about 3-4 minutes.
  4. Stir in the rice, chicken broth, and salt and pepper.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and liquid is absorbed.
  6. Add shrimp to the skillet and cook for an additional 5 minutes or until the shrimp are pink and cooked through.
  7. Remove from heat and stir in the shredded cheese until melted and well combined.
