- 1 pound shrimp, peeled and deveined

- 2 cups chicken broth
- 1 cup shredded cheese (e.g., cheddar or mozzarella)
- 1 tablespoon olive oil
- 2 cloves garlic, minced

Instructions
- In a large skillet, heat olive oil over medium heat.
- Add sliced sausage and cook until browned, about 5 minutes.
- Add minced garlic and mixed vegetables, sautéing until the veggies are tender, about 3-4 minutes.
- Stir in the rice, chicken broth, and salt and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and liquid is absorbed.
- Add shrimp to the skillet and cook for an additional 5 minutes or until the shrimp are pink and cooked through.
- Remove from heat and stir in the shredded cheese until melted and well combined.
