Delicious tartlets filled with sweet-tangy cranberries and creamy brie, wrapped in buttery puff pastry.

- 1 package of pre-made puff pastry (thawed)
- 1 cup fresh cranberries
- 1/2 cup brie cheese, cut into small pieces
- 1/4 cup sugar
- 1 tablespoon balsamic vinegar
- 1 tablespoon fresh rosemary, chopped
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
- Chopped walnuts or pecans (optional)
- A drizzle of honey (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- On a floured surface, roll out the puff pastry and cut it into squares or circles. Place them on a baking sheet lined with parchment paper.
- In a medium saucepan, combine cranberries, sugar, balsamic vinegar, rosemary, salt, and pepper. Cook over medium heat until the cranberries burst, about 5-7 minutes.
- Place a piece of brie cheese in the center of each pastry cut-out and top with a spoonful of the cranberry mixture.
- Brush the edges of the pastry with the beaten egg.
- Bake for 15-20 minutes, until the pastries are puffed and golden brown.
- Allow to cool slightly before serving.
Notes
These tartlets can be served warm or at room temperature and pair well with a salad or as an appetizer.
