- 1 sheet of puff pastry
- 2 cups mixed vegetables (e.g., spinach, mushrooms, bell peppers, carrots)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 egg (for egg wash)
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a pan, heat olive oil over medium heat and sauté the onions and garlic until translucent.
- Add the mixed vegetables and cook until tender. Season with salt and pepper.
- In a bowl, mix the sautéed vegetables with ricotta and Parmesan cheese.
- Roll out the puff pastry and place the filling in the center.
- Fold the pastry over the filling and seal the edges. Brush the top with the beaten egg.
- Bake for 25-30 minutes or until golden brown.
- Let it cool for a few minutes before slicing and serving.
Notes
To store leftovers, place in an airtight container in the refrigerator. Reheat in the oven to regain crispiness.
