Ingredients

  • 1 sheet of puff pastry
  • 2 cups mixed vegetables (e.g., spinach, mushrooms, bell peppers, carrots)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg (for egg wash)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a pan, heat olive oil over medium heat and sauté the onions and garlic until translucent.
  3. Add the mixed vegetables and cook until tender. Season with salt and pepper.
  4. In a bowl, mix the sautéed vegetables with ricotta and Parmesan cheese.
  5. Roll out the puff pastry and place the filling in the center.
  6. Fold the pastry over the filling and seal the edges. Brush the top with the beaten egg.
  7. Bake for 25-30 minutes or until golden brown.
  8. Let it cool for a few minutes before slicing and serving.

Notes

To store leftovers, place in an airtight container in the refrigerator. Reheat in the oven to regain crispiness.
