- 1 lb chicken breast, cut into bite-sized pieces
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 head of romaine lettuce, chopped
- ½ cup Caesar dressing
- ¼ cup Parmesan cheese, grated
- 1 cup croutons
Instructions
- Preheat the oven to 400°F (200°C).
- In a large mixing bowl, toss the chicken pieces with olive oil, salt, and pepper until evenly coated.
- Spread the chicken pieces in a single layer on a lined sheet pan.
- Bake for 15-20 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 75°C).
- In a large bowl, combine the chopped romaine lettuce, cooked chicken, and Caesar dressing. Toss gently until the lettuce is well-coated.
- Serve immediately, topped with grated Parmesan cheese and crunchy croutons.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Keep chicken separate from the lettuce and dressing until ready to serve.
