- 1 lb chicken breast, sliced
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Tortillas for serving
- Optional toppings: avocado, sour cream, cilantro
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine sliced chicken, bell pepper, onion, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Mix to coat the chicken and vegetables evenly.
- Spread the mixture evenly on a sheet pan.
- Bake for 20-25 minutes or until the chicken is cooked through and the vegetables are tender.
- Remove from the oven, serve with tortillas, and enjoy with your choice of optional toppings!
Notes
For crispy veggies, toss them on the sheet pan halfway through cooking. Marinade the chicken for an hour for enhanced flavor.
