- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/2 cup vegetable oil

Instructions

- In a large bowl, mix together the flour, sugar, baking powder, baking soda, spices, and salt until well combined.
- In another bowl, whisk together the buttermilk, vegetable oil, and eggs until smooth.
- Pour the wet ingredients into the dry ingredients, stirring until just mixed. Gently fold in the dried fruits and nuts, being careful not to overmix.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Once cooled, roll out the marzipan and place it atop the loaf for a decorative touch. For an extra treat, lightly toast the marzipan under a broiler for a few minutes until golden.
Notes
For best results, avoid overmixing the batter to ensure a light and fluffy loaf.
