Ingredients

  • 1 lb ground beef (about 450 g)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 medium onion, chopped (about 1 cup)
  • 1 cup shredded cheddar cheese (about 113 g)
  • 2 cups frozen diced potatoes (about 300 g)
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, brown the ground beef and chopped onion until the meat is no longer pink and the onion is translucent; drain excess fat.
  2. In the slow cooker, combine the browned beef and onion, black beans, corn, diced tomatoes, diced tomatoes with green chilies, frozen diced potatoes, chili powder, garlic powder, salt, and pepper.
  3. Stir everything until well mixed and evenly distributed.
  4. Cover and cook on low for 6 hours or on high for 3 hours, checking midway for moisture.
  5. In the last 15 minutes of cooking, sprinkle shredded cheddar cheese on top and cover until melted.
  6. Serve hot.

Notes

For a healthier option, use lean ground turkey or vegetarian substitutes. This casserole is naturally gluten-free if all ingredients are verified.
