Slow Cooker Lemon Herb Chicken with Fluffy Rice


Description

A bright and citrusy slow cooker dish featuring tender chicken and fluffy rice, infused with lemon and aromatic herbs.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 2 cups long-grain white rice
  • Fresh parsley for garnish

Instructions

  1. In a bowl, mix lemon juice, olive oil, minced garlic, oregano, thyme, salt, and pepper until combined.
  2. Place the chicken breasts in the slow cooker and pour the lemon-herb mixture evenly over them.
  3. Pour the 2 cups of chicken broth into the slow cooker around the chicken.
  4. Cover and cook on low for 4–6 hours or until chicken is tender.
  5. Remove the chicken and shred or slice as desired.
  6. Stir the uncooked rice into the hot broth in the slow cooker.
  7. Cover and cook on low for an additional 20–25 minutes, until the rice is tender and fluffy.
  8. Serve the chicken over the rice and garnish generously with fresh parsley.

Notes

Use low-sodium broth for less sodium content. Check doneness of chicken with a thermometer.
