Slow Cooker Mongolian Beef


Description

A comforting dish of slow-cooked beef in a glossy, caramelized sauce with rich flavors of sesame and brown sugar, perfect for busy weeknights and gatherings.


Ingredients

  • 1 1/2 pounds flank steak, thinly sliced against the grain
  • 1/4 cup cornstarch
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 1/2 cup low sodium soy sauce
  • 1/3 cup brown sugar
  • 1/2 cup water
  • 1/2 cup green onions, sliced (for garnish)

Instructions

  1. Toss the flank steak with cornstarch in a bowl until evenly coated.
  2. Layer the coated steak in the slow cooker.
  3. Add sesame oil, garlic, ginger, soy sauce, brown sugar, and water to the slow cooker and stir gently.
  4. Cover and cook on HIGH for 2–3 hours or LOW for 4–5 hours until the beef is tender.
  5. If desired, mix cornstarch with cold water and stir into the slow cooker in the last 10–15 minutes for a thicker sauce.
  6. Garnish with green onions before serving over rice or noodles.

Notes

Adjust soy sauce for lower sodium options. Use tamari for gluten-free. This dish is ideal for meal prep and potlucks.
