Slow Cooker Olive Garden Chicken Pasta


Description

A cozy, comforting dish featuring tender chicken in a creamy sauce with perfectly cooked pasta, perfect for family gatherings or busy weekdays.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 packet Italian dressing mix
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 8 oz cream cheese
  • 12 oz pasta (penne or rotini)
  • 1 cup grated parmesan cheese
  • 1 cup sliced mushrooms (optional)
  • 1 cup spinach (optional)
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. Sprinkle the Italian dressing mix over the chicken.
  3. Pour the cream of chicken soup and chicken broth on top.
  4. Cover and cook on low for 6-7 hours or until the chicken is fully cooked.
  5. Before serving, shred the chicken in the slow cooker and stir in the cream cheese until melted and combined.
  6. In a separate pot, cook the pasta according to package instructions. Drain the pasta.
  7. Mix the cooked pasta with the chicken mixture in the slow cooker.
  8. Stir in parmesan cheese, mushrooms, and spinach if using.
  9. Season with salt and pepper to taste.
  10. Serve warm.

Notes

Best enjoyed fresh, but can be stored in an airtight container for up to 3 days in the fridge. Add extra dollop of cream cheese for richer sauce consistency.
