- 4 boneless, skinless chicken breasts
- 1 packet Italian dressing mix
- 1 can cream of chicken soup
- 1 cup chicken broth
- 8 oz cream cheese
- 12 oz pasta (penne or rotini)
- 1 cup grated parmesan cheese
- 1 cup sliced mushrooms (optional)
- 1 cup spinach (optional)
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the slow cooker.
- Sprinkle the Italian dressing mix over the chicken.
- Pour the cream of chicken soup and chicken broth on top.
- Cover and cook on low for 6-7 hours or until the chicken is fully cooked.
- Before serving, shred the chicken in the slow cooker and stir in the cream cheese until melted and combined.
- In a separate pot, cook the pasta according to package instructions. Drain the pasta.
- Mix the cooked pasta with the chicken mixture in the slow cooker.
- Stir in parmesan cheese, mushrooms, and spinach if using.
- Season with salt and pepper to taste.
- Serve warm.
Notes
Best enjoyed fresh, but can be stored in an airtight container for up to 3 days in the fridge. Add extra dollop of cream cheese for richer sauce consistency.
