Description
Sweet and savory meatballs simmered in a tangy pineapple barbecue sauce, perfect for gatherings and weeknight dinners.
Ingredients
Scale
- 1 pound ground beef or turkey
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup barbecue sauce
- 1 cup crushed pineapple (drained)
- 1/4 cup chopped green onions (optional for garnish)
Instructions
- In a large bowl, combine the ground meat, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix until just combined; don’t overmix to keep your meatballs tender!
- Form the mixture into small meatballs, about 1 inch in diameter.
- Arrange the meatballs in the slow cooker.
- In a separate bowl, mix the barbecue sauce and crushed pineapple together. Pour this mixture over the meatballs in the slow cooker, ensuring they’re fully covered.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the meatballs are cooked through and tender.
- Serve warm, garnished with chopped green onions if desired.
Notes
To check doneness, ensure the internal temperature of the meatballs reaches 165°F (74°C). Experiment with different sauces like teriyaki or sweet chili!
