- 2 pounds Yukon Gold potatoes
- 4 cloves garlic, minced
- 1/2 cup milk or heavy cream
- 1/4 cup unsalted butter
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Chopped chives for garnish (optional)
Instructions
- Peel and chop the Yukon Gold potatoes into even chunks.
- In a large pot, cover the chunks with salted water. Bring to a boil and cook until tender, approximately 15-20 minutes.
- In a small saucepan, melt the butter over medium heat. Sauté the minced garlic until fragrant, about 2-3 minutes; be careful not to burn it.
- Drain the cooked potatoes and return them to the pot. Add the garlic butter, milk or cream, smoked paprika, salt, and pepper.
- Mash the mixture until smooth and creamy, adjusting seasoning to taste.
- Transfer to a serving dish and garnish with chopped chives, if desired. Serve warm for the best experience.
Notes
For a vegan version, substitute dairy with plant-based milk and vegan butter. Avoid overmixing potatoes to keep them creamy.
