  • 2 slices of sourdough bread
  • 1 cup cottage cheese
  • 1 cup fresh raspberries
  • 2 tbsp chia seeds
  • 12 tbsp honey or maple syrup (to taste)
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

  1. Preheat your toaster or oven and toast the sourdough bread slices until golden brown and crisp.
  2. In a medium bowl, combine the cottage cheese, a pinch of salt, vanilla extract, and honey or maple syrup. Whip the mixture until creamy and fluffy.
  3. In another bowl, mash the fresh raspberries with a fork. Stir in the chia seeds and honey or maple syrup, then let it sit for 15-30 minutes to thicken.
  4. Spread the whipped cottage cheese on each slice of toasted sourdough. Top with raspberry chia jam.
  5. Serve immediately and enjoy.
