- 2 cups chicken broth
- 1 lb ground beef or pork
- 1 onion, diced
- 1 bell pepper, diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
- Parsley (for garnish)
Instructions
- Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rice and chicken broth, bringing it to a boil. Once boiling, reduce heat to low, cover, and simmer for about 20 minutes or until the rice is fully cooked. Remove from heat and let sit with the lid on.
- In a large skillet, heat some oil over medium heat. Add the ground meat and cook until browned, breaking it apart with a spoon.
- Add the diced onion, bell pepper, celery, and minced garlic to the skillet. Sauté until the vegetables are tender and fragrant, about 5-7 minutes.
- Stir in the Cajun seasoning, salt, and pepper. Cook for another 2-3 minutes to let the flavors meld.
- Fluff the cooked rice with a fork and add it to the meat and vegetable mixture. Stir well to combine all the ingredients and heat through for another 2-3 minutes.
- Serve hot, garnished with sliced green onions and parsley.
Notes
Adjust Cajun seasoning to your spice preference. For added depth, brown the meat well and consider adding Worcestershire sauce.
