Southwest Chicken Salad


Description

A vibrant and flavorful salad with grilled chicken, black beans, sweet corn, and a zesty chipotle-lime dressing, perfect for any occasion.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup sweet corn (frozen or canned)
  • 4 cups romaine lettuce, chopped
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup chipotle-lime dressing (store-bought or homemade)

Instructions

  1. Preheat your grill or stovetop grill pan. Grill the chicken breasts for about 6–7 minutes on each side until cooked through. A meat thermometer should read 165°F (74°C). Remove and slice into strips.
  2. In a large bowl, mix the black beans, sweet corn, chopped romaine lettuce, diced avocado, and halved cherry tomatoes.
  3. Layer the grilled chicken strips on top of the salad mixture.
  4. Generously drizzle the smoky chipotle-lime dressing over the salad. Toss gently to combine, being careful not to mash the avocado.
  5. Serve immediately or chill in the refrigerator for meal prep.

Notes

For a vegetarian version, replace chicken with grilled shrimp or tofu. Serve with tortilla chips and cucumber lemonade for an elevated experience.
