- 2 boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup sweet corn (frozen or canned)
- 4 cups romaine lettuce, chopped
- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- ½ cup chipotle-lime dressing (store-bought or homemade)
Instructions
- Preheat your grill or stovetop grill pan. Grill the chicken breasts for about 6–7 minutes on each side until cooked through. A meat thermometer should read 165°F (74°C). Remove and slice into strips.
- In a large bowl, mix the black beans, sweet corn, chopped romaine lettuce, diced avocado, and halved cherry tomatoes.
- Layer the grilled chicken strips on top of the salad mixture.
- Generously drizzle the smoky chipotle-lime dressing over the salad. Toss gently to combine, being careful not to mash the avocado.
- Serve immediately or chill in the refrigerator for meal prep.
Notes
For a vegetarian version, replace chicken with grilled shrimp or tofu. Serve with tortilla chips and cucumber lemonade for an elevated experience.
