Description

Ingredients

  • 1 whole chicken (about 34 pounds)
  • 1 cup soy sauce
  • 1/2 cup water
  • 1/4 cup rice wine or cooking sherry
  • 1/4 cup sugar
  • 4 cloves garlic, minced
  • 1 inch piece of ginger, sliced
  • 2 green onions, chopped
  • Black pepper to taste
  • Sesame oil (optional)

Instructions

  1. In a large pot, combine soy sauce, water, rice wine, sugar, minced garlic, ginger, green onions, and black pepper.
  2. Bring the mixture to a simmer over medium heat.
  3. Add the whole chicken to the pot, making sure it is fully submerged in the sauce.
  4. Cover and simmer for about 30-40 minutes, turning the chicken occasionally, until fully cooked.
  5. Once cooked, remove the chicken from the pot and let it rest for a few minutes.
  6. If desired, reduce the sauce over medium heat to thicken.
  7. Slice and serve the chicken drizzled with the sauce, and enjoy!

Notes

Use fresh garlic and ginger for better flavor; let the chicken rest after cooking to retain juices.
