Description

Delicious and easy-to-make appetizer bites filled with savory black beans and melted cheese, perfect for gatherings.


Ingredients

  • 1 can black beans, rinsed and drained
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 4 small flour tortillas
  • Cooking spray or oil for frying
  • Sour cream and salsa for serving

Instructions

  1. In a bowl, mash the black beans with a fork until slightly chunky, then mix in cumin, chili powder, garlic powder, and onion powder.
  2. Spread the bean mixture evenly onto half of each tortilla and sprinkle with cheese.
  3. Fold the tortillas in half, forming a half-moon shape.
  4. Heat a pan over medium heat and add a little cooking spray or oil.
  5. Cook the quesadillas for 3-4 minutes on each side, until golden brown and the cheese is melted.
  6. Remove from heat, cut into bite-sized pieces, and serve with sour cream and salsa.
