Ingredients

- 1 can black beans, rinsed and drained
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 4 small flour tortillas
- Cooking spray or oil for frying
- Sour cream and salsa for serving
Instructions
- In a bowl, mash the black beans with a fork until slightly chunky, then mix in cumin, chili powder, garlic powder, and onion powder.
- Spread the bean mixture evenly onto half of each tortilla and sprinkle with cheese.
- Fold the tortillas in half, forming a half-moon shape.
- Heat a pan over medium heat and add a little cooking spray or oil.
- Cook the quesadillas for 3-4 minutes on each side, until golden brown and the cheese is melted.
- Remove from heat, cut into bite-sized pieces, and serve with sour cream and salsa.
Notes
Serve warm with sour cream or salsa. Can be stored in the fridge for up to 5 days.
